Eggplant Parmigiana

Here’s a short-n-sweet story about my venture into the dating scene after my Laurie passed in ’01.

A couple of us (Roxane Guerra & Cindy Gonzalez-Hernandez) were discussing different dishes at one of our very favorite restaurants here in San Antonio, Little Italy.
I mentioned having tasted the eggplant parmigiana there & loved it.

So, of course, I had to put a little twist into our conversation…

“In fact, ~17 years ago, I went on a blind date (set up by Bryan Cardenas) and we sat at the very end of the restaurant. (She was gorgeous & so outta my league.) I had the Eggplant Rollatine…she had the Veal Parmigiana.

Out of nowhere, she warns me, “And don’t think that you’re gonna get any tonight!” 👉🏼 🧔🏻


So, of course, I ordered a nice bottle of red wine. Then, another.

Then she took me out for my maiden voyage on the good ship, Malibu (coconut rum).

Turns out she lied…I got a rug burn later! 😉”
